Peruvian Citrus Salad

A very simple Peruvian-style fresh salad. No oil and no vinaigrette: lemon, a small splash of red wine vinegar, and the avocado if you use it become the dressing as everything gets tossed.

Roughly by volume: mostly greens, then tomato, cucumber, and avocado. The onion, lemon, and vinegar are accents. One salad feeds two as a meal or four as a side.

    One salad is half of a 10 oz box of organicgirl baby spring mix, which is the same as one regular 5 oz box. The original is built on green leaf and purple leaf lettuce, green down first and then purple; the spring mix carries both. The avocado is optional: without it the salad eats lighter and sharper, so go a touch easier on the lemon. Dress it right before serving, it does not hold.
